Japanese Cuisine by Professional Chef part2

I visited my friend, who is Japanese chef, yesterday. She came from Miyagi Pref. and many of her relatives became victims of earthquake and tsunami in Japan.
She told me about her uncle and aunt's story. And I was very impressed with their story and that also encouraged me...

They were running Iron Works there, but they decided that they would close their business soon because they got too old.

March 11th.! they lost everything due to earthquake and tsunami except for the crane. But they didn't lose their heart and said to their relatives "We have a narrow escape! So we can start afresh with this crane!" with smiles...
How shocked they are! but they are not discouraged...
They decided not to close their factory.

There have been many natural disasters in Japan because of it's insecure environment and also defeated in world war 2. Nuclear bombs were dropped at Hiroshima and Nagasaki.
But the remarkable recovery of post war Japan has caught attention of the whole world.

I think Japanese traditional foods are one of the reason for the remarkable recovery. Easy to degrade, rich of minerals, low calories etc. I believe Japanese foods are the power resource of Japanese people. But nowadays many Japanese, especially young generation don't make and have decent Japanese food...

She prepared very delicious decent Japanese cuisine for me!!!

1. Japanese White Rice
2. Miso soup with Japanese radish and taro
3. Okara(=Tofu refuse) with vegetables
4. Hijiki seaweed
5. Boiled malabar spinach with salt and sesame oil
6. Loquat leaf tea

Today I would like to focus malabar spinach. It is rich in vitamin A, C, iron, soluble fiver and calcium. it's low in calories but high in protein. It is usually cooked soup or stir-fries in many countries, but we japanese boil spinach and eat with soy sauce. But she cooked it with sesame oil and salt, and it was also very delicious.

Vegetarian restaurant in Bangkok

Last Saturday my friends and I went to Thailand Vegetarian Society's food court to have vegetarian lunch. The food court is in the opposite side of JJ Mall (near Kampaengphet subway station=only 10 min. walk) All of the dishes we had were pretty delicious and cheap. (maybe cheapest in BKK), mi loved Larb(North-eastern Thai salad) and Naem(North-eastern Thai Sausage) very much. Even my friends are not vegetarians but they were enjoyed vegetarian cuisine. I hope many people would be interested in Vegetarian foods because it is very good for health and can also save the energy.

Mushrooms are low calorie food, contain vitamin Bs, minerals and dietary fibers. Both vegetarians and non-vegetarians also have mushroom because of its good taste.
