Gado Gado indonesian salad

gado gado is an authentic indonesian vegetable salad with peanuts sauce dressing. the indonesian peanuts sauce is originally made with indonesian stone mortar and some people use blade grinder to make it recently. but unfortunately i didn't have indonesian stone mortar so i made sauce with thai ceramic mortar... it took more than half hour to make it...
the sauce was too thick but it was pretty delicious.




ingredients of peanuts sauce dressing

peanuts
garlic
red chilies
coconut sugar
vegan shrimp flavor paste (kapi jay) instead of dried shrimp paste
lime juice
soy sauce
salt
tamarind paste
water to dilute

Yum Wun Sen, more sustainable life


Yum Wun Sen: Thai taste vermicelli salad

only vegan can reduce energy consumption much but i want to recommend better way.
that's a raw food but many people don't accept 100% raw food.

there are lots of traditional half-raw foods in thailand and in other countries.

i recommend thai traditional half-raw food "yum wun sen" or "spicy vermicelli salad"
it's easy to make and very tasty.
you use electricity or gas only for cooking vermicelli and mushrooms (boil a few mins).

traditional half-raw food natto & hmong rice

traditional half-raw food to reduce energy consumption.

there are lots of traditional half-raw foods in the world. these aren't 100% raw, but no need to consume much gas and electricity for cooking. some foods are fermented. people have had these traditional foods for thousands years, so these fresh half-raw foods are good for our health, too.

1, natto (fermented soybean), soy sauce, green onion and mustard
2, hmong's organic rice and sticky rice
      with order made chopsticks given by sempai.




natto is japanese traditional food made from soybean fermented with bacillus subtilis.
it's easy to digest and popular as a breakfast. it's rich source of protein, mineral etc.
some people don't like it because of its strong smell.

natto is usually served with rice and someone add soy sauce, chopped green onion, mustard etc. to taste.

today i had natto with hmong's rice + sticky rice (3:1).
when i stayed at hmong's village, villagers gave me their rice.
it tastes really great.
