num tok for sustainable life

northern-east thai food or arhan isan has half-raw foods for sustainable life.

num tok or grilled meat salad isan style is one of them. we, vegans use tofu instead of grilled pork, beef etc. i recommend to be a frozen tofu and boil or fry it. you just boil or fry tofu only a few minutes and mix with thai herb.














ingredients:
Tofu (recommend to freeze for one night)
sawtooth coriander
red onion
chili powder
roasted rice

salt
soy sause
brown sugar
lime juice

home gardening and raw foods to reduce the energy consumption

now is time to think about environment.
more than 320 people were killed by the flood in thailand. one of the causes of this year's flood crisis is forest clearing.we should reconsider our behavior.

i'm vegan but i think vegan is not enough for sustainable life. so i decided to have more raw foods rather than before.

this is chili from my balcony garden. i made vegetarian nam phrik kapi from my chili.(but other ingredients are from the local market at phutthabucha temple)














i had fresh vegetable with nam phrik kapi(center). i bought vegetarian kapi
from vegetarian shop near wongwien yai. you can find it at JJ vegetarian society, too.

vegetarian festa in thai




















vegetarian festival 2011 started yesterday in thailand. for vegan people like me, it is very convenient to find foods because we can buy foods everywhere...

i think it is very good custom for both health and environment. it was reported that animal production requires more energy and water than wheat and vegetable.

if we become vegetarian (or even reduce meat consumption), we can solve food shortage in developing countries (especially in african countries).

japan has great custom and culture.
macrobiotic is one of the most good food culture which is benefit for health and environment.
rastafarians' ital food is very cloth to japanese macrobiotic, having rice, beans, vegetable, fruits and some small fish.

vege festa, that would be a very good opportunity for many people to think about environmental issue...

fried rice - reduce oil consumption

many people like fried rice, but they are anxious about it's high calories.
i also love fried rice but anxious about too much oil consumption and water pollution.

so when i wanna have a fried rice, i don't fry rice???

1. first, i prepare vegetables, tofu etc.
2. boil or steam 1 with salt or soy sauce. (or fry with a little oil)
3. mix 2 and a little sesame oil with rice. (not fry)

you can enjoy fried rice flavor....

balcony gardening

balcony gardening is good way for sustainable living.
it's also easy even for the people who loves in an apartment like me.
i am growing sweet basil, holy basil, coriander leaves etc...

peppermint, red chili, green onion are also easy to cultivate.

after i came back from disaster volunteer in japan.
most of my plants were died....
so i am planing to grow more vegetables in this rainy season.

My favorite Indian restaurant in Bangkok"Punjab Sweet & Restaurant"

i love indian foods, especially "masala dosa" is one of the most favorite foods. i often have masla dosa...

and vegetarian is one choice to save our planet, because vegetable needs less energy consumption for its production than animal meats.

my favorite indian restaurant in bangkok is "punjab sweets and restaurant" located at phahurat
area. i often go there to have masala dosa.

this is masala dosa which is very popular southern snack.

very delicious italian "Margherita 579" in kyoto - power of volunteer 3

since i came back from volunteer in japan, many weeks had past and work busy everyday. but i still remember the beautiful taste of "Margherita 579" in kyoto. actually that is not vegan or vegetarian restaurant, but chef has enough experience on macrobiotic, so his dishes was so delicious and healthy. i strongly recommend "Margherita 579" to vegans and macrobiotic people.

mr. inayama, who is a saw player and is also a teacher in shiga univ. , bring me there. because he is friends with chef.

he is planing to give a concert for disaster victims both in tohoku area and in thailand(to raise contribution)

natural vegetable and brown rice restaurant "genmai harmony" in osaka - power of volunteering 2

today i wanna recommend natural foods restaurant "genmai harmony" near nishi nakajima minamigata st. i really enjoyed the healthy and true healthy foods with delicious brown rice there. the owners pay attention to the safety of ingredients.

so i strongly recommend "genmai harmony"!


during edo era, many upper class people were suffering from curious disease "edo wazurai" but poor people didn't get it. now we call it beriberi and know it's caused by a deficiency of vitamin b.

why did the rich people or even middle class people who had lived in edo for many years got baribari, but poor people who were living in town or countryside did not?

because the people in urban city didn't like to have brown rice which contains vitamin b...

now many people are interested in macrobiotic and organic foods and some people also try to have brown rice...

i also love brown rice.

macrobiotic restaurant in kyoto - power of volunteering

today i would like to recommend a macrobiotic restaurant in kyoto."Vege Note" i went there with two univ. teachers and enjoyed vegan cuisine there. they had various kinds of foods, authentic japanese, chinese, western etc. and all dishes were pretty delicious. i was also impressed with their detail of foods and attentiveness to the customers.

so i got the power of volunteering.

you might know why i recommend it if you go there or even just see the pics i took there.

Friends support my volunteering: Home-Cooked Meals

Japanese people who live in foreign countries for many years tend to prefer Home-cooked meals rather than authentic Japanese cuisine like Sashimi or Sushi, and home-made meals also could give me the power. All my friends understand what I need, and made great home-made meals for me. I sincerely appreciate your support.

I loved all the dishes that my friends cooked for me, but today I could show you some of them.

The first three dishes were home=made meals by P' Mew in Yokohama!
First was a break fast. I love her all dishes. Thank you very much.

















Next was Vegetable Yakisoba or Fried noodle by P' Mew. It was also tasty. Than you P' Mew.



















It was Curry Rice by P' Mew. Thank you sincerely.



















Teacher Kumiko who is Kikuchi san's wife also made foods for me. It was also delicious and Chinese taste gave me the power to work as volunteer. She is also great teacher. Thank you Teacher Kumiko!

















These dished were made by Mama-Yamashita who is a mother of Jasmine or Mari-chan. Her menu was also great and her daughter mari- chan is also cute. Thanks for your help.















It is traditional Japanese Home-made meals by Japanese mothers that was made by all moms in our countries but now we are very hard to find it!
This was made by Satoe- chan's mother and tastes perfect. I think all Japanese should have this taste for the reconstruction of Japan!

Friends support my volunteering: Hot Pot


I went back to Japan to help disaster victims. I worked as a volunteer worker for a week, but I think I couldn't carry out my duty without my friends support...
I sincerely thank for any friends who made the great dishes for me.

Hot pot is one of the great dish for vegans and some of friends also made hot pot for me.
Actually for no-vegans, only vegetable hot pots maybe miss something.... Thank you so much.

Some no-Vegans ask me how can we get a protein... The answer is Tofu and Wheat Gluten!

Tofu and Wheat gluten is very important protein sources for vegans. All friends put Tofu and/or Wheat Gluten into the hot pot so I could get the power to work as a volunteer worker.

Many people know the tofu but wheat gluten is not popular like tofu. But in Japanese food culture wheat gluten is very popular as "FU=麩" or "O- FU=お麩".

Japanese people use FU for hot pot because it tastes good and good for health, too.

Northern Thai Curry Noodle=Khao Soi (Vegetarian)

I wanna recommend authentic northern thai cuisine "Khao Soi.=Curry Noodle!

Usually it's not vegetarian dish, but we can order vegetarian khao soi at
food court of Thai Vegetarian Society(JJ)".

When I was in Chiang mai (more than 10 years ago!), I often had it.
(I wasn't vegetarian or vegan st that time so I had Chicken Khao Soi.

But I think Vegetarian one is also delicious for both vegans and non-vegans...

You can try it at food court of thai vegetarian society.

Let's reduce meat consumption to save energy!

Many people who wanna be vegetarians would be in trouble about no feeling satisfaction after meals. Because of its' lightly flavor... But there is a good idea to avoid this problem... That is "Indian Food". Many of Indians are vegetarians (but not vegan=they have milk). Indian spices could give beautiful taste to your vegetable dishes.

Actually I have ever introduced Indian cuisine but they are not easy to make for not-Indians(me too). So today I recommend "Curry Udon". That's a Indian-Japanese hybrid cuisine! It is not necessary to mix many kinds of spices like authentic Indian dishes... You just add some curry powder or garam masala powder into your udon...your lightly flavor udon without meat would be change to the delicious curry udon
noodle!

Indian spicy cuisine can not only help to reduce the meat consumption but also good for health=reduce medical expenses...

Japanese Cuisine by Professional Chef part2

I visited my friend, who is Japanese chef, yesterday. She came from Miyagi Pref. and many of her relatives became victims of earthquake and tsunami in Japan.
She told me about her uncle and aunt's story. And I was very impressed with their story and that also encouraged me...

They were running Iron Works there, but they decided that they would close their business soon because they got too old.

March 11th.! they lost everything due to earthquake and tsunami except for the crane. But they didn't lose their heart and said to their relatives "We have a narrow escape! So we can start afresh with this crane!" with smiles...
How shocked they are! but they are not discouraged...
They decided not to close their factory.

There have been many natural disasters in Japan because of it's insecure environment and also defeated in world war 2. Nuclear bombs were dropped at Hiroshima and Nagasaki.
But the remarkable recovery of post war Japan has caught attention of the whole world.

I think Japanese traditional foods are one of the reason for the remarkable recovery. Easy to degrade, rich of minerals, low calories etc. I believe Japanese foods are the power resource of Japanese people. But nowadays many Japanese, especially young generation don't make and have decent Japanese food...

She prepared very delicious decent Japanese cuisine for me!!!

3. Okara(=Tofu refuse) with vegetables
4. Hijiki seaweed
5. Boiled malabar spinach with salt and sesame oil
6. Loquat leaf tea

Today I would like to focus malabar spinach. It is rich in vitamin A, C, iron, soluble fiver and calcium. it's low in calories but high in protein. It is usually cooked soup or stir-fries in many countries, but we japanese boil spinach and eat with soy sauce. But she cooked it with sesame oil and salt, and it was also very delicious.

Vegetarian restaurant in Bangkok

Last Saturday my friends and I went to Thailand Vegetarian Society's food court to have vegetarian lunch. The food court is in the opposite side of JJ Mall (near Kampaengphet subway station=only 10 min. walk) All of the dishes we had were pretty delicious and cheap. (maybe cheapest in BKK), mi loved Larb(North-eastern Thai salad) and Naem(North-eastern Thai Sausage) very much. Even my friends are not vegetarians but they were enjoyed vegetarian cuisine. I hope many people would be interested in Vegetarian foods because it is very good for health and can also save the energy.

Okra salad

Okra is a plant of African origin, and now is cultivated in tropical, subtropical and warm region around the world. Okra is a rich source of dietary fiber and very low in calories, so it can help to decrease the cholesterol.
Okra also contains vitamin A and flavonoid anti-oxidants such as beta -carotenes, xanthin and lutein.
